W.W.W


*He's 11 months now!

*While gone for Thanksgiving, Walker gained two new teeth, for a grand total of 8 teeth now!

*Also while there he started standing on his own, going from on his knees to his two little chubby feet.

*Today he climed up onto a twin bed all by his little self. 

*He loves to babble.

*He really enjoys taking bathes, and watching the tub fill up while standing outside of it.

*For some odd reason, he really likes to have his face lotion, it seems to calm him down while he is upset. He must of got that from Eric, because I know for sure I wouldn't want to be touchet let alone my face.

*He's really started to like stuffed animals, and is super cute to watch him play with them.

Thanksgiving

 For Thanksgiving this year we made a quick trip down to Utah and Idaho to see Erics parents and to celebrate the holiday with the Capell side. The first night we stayed at Erics grandparents house in Idaho. While there Sherry wanted to throw Walker a little birthday party.
 For Thanksgiving day we went down to Sheldon and Suzann's house in Utah. There was great company and yummy food. It was so nice to catch up with everyone.

A hymn & other stuff

This hymn has always been one of my favorites,  and I have been thinking about this song/hymn a lot lately. I think that is fits perfectly with Thanksgiving.

Because I have been given much, I too must give.

Eric and I have been extremly blessed in our lives by our Heavenly Father. There are times when I look back on when we were first married and wondered how in the world did we get through that, but I know how, it's because our Heavenly Father was helping us along the way.
Some of the kids that I work with at the school have some really bad behavioral problems, and I think that is derived from the lack of love in their home. These children require lots and lots of patients on my part and I am sure on theirs. I need to focus more on sharing the love that my Father in Heaven has been blessing me with.
For example their is one kid that I work with that has had a horrible up bringing and some teachers has already wrote him of as the bad kid, and he really isn't. I have been trying to work on showing him love and kindness, and let me tell you it has gone a long ways. We have been working on changing his language, especially using the Lords name in vain. So one day, he was having a typical bad day and was saying it, so I told him how I didn't like it and that it hurt my feelings when he spoke like that. He was almost in tears because he felt so bad and guess what, he apoligized! I don't think this kids has ever apoligized a day in his life. I couldn't be more proud of him, even though we still struggle with him saying that, he recognizes when he does it now and tries not to say it.
I know that their are always going to be people that it may be more difficult to show love and kindness towards but I think that it is something we all need to be working on.

Anways, onto us. I just recieved a calling about a week and half ago to teach the sunbeams in primary. I have 4 little cute boys. Eric is almost done with his frist semester of leveling courses at the University. I couldn't be more proud of him. I have never really seen him study until this year and he is doing awsome in his classes. Walker is so stinkin' cute. He gives us a good laugh. His new thing is to put something in his mouth and looks to find one of us so we'll laugh and then he laughs. He is such a social laugher, love it! The other day he took 7 steps by himself! WOW! He has six teeth and will be 11 months on the 24. I can't belive that, it seems to of gone by fast. He has been babbling way more and loves to talk to himself in his carseat.  Still doesn't like to be cuddled with, but he he does like to rub his face on yours, which I tottally blame on Eric! Thanks babe.

Cauliflower

Mashed Cauliflower in replace of Mashed Potatoes. Yes, you heard me right, no joke. I heard about this at work and was very curious to see how it tasted. The first batch that I made was from fresh cauliflower and the second one was from frozen. I wanted to compare the fresh from frozen because frozen is cheaper. I liked them but they do need a little salt. It is a nice healthy twist for you to enjoy and trick to get kids to eat their veggies.

All you do is boil the cauliflower until soft, drain the water, then blend it together with a little milk in a blender or with a hand mixer. Add salt and pepper to taste.

Cilantro Lime Chicken

I made this yesterday and it was so yummy! I know I can proudly say that because Eric liked it.
  • Chicken:
  • 2 tablespoons minced fresh cilantro
  • 2 1/2 tablespoons fresh lime juice
  • 1 1/2 tablespoons olive oil
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 1/4 teaspoon salt
  • Cooking spray
  • Salsa:
  • 1 cup chopped plum tomato (about 2)
  • 2 tablespoons finely chopped onion
  • 2 teaspoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 avocado, peeled and finely chopped

Preparation

  • 1. To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.
  • 2. To prepare salsa, combine tomato and next 4 ingredients (through pepper) in a medium bowl. Add avocado; stir gently to combine. Serve salsa over chicken.
I didn't add any of the salt that the recipe called for.
I used lime juice from a bottle that we had.
I added cilantro to the salsa.

Halloween

Walkers first Halloween was more fun than I thought. I really didn't see the point in buying a costume but Karen was so amazing and let us borrow one of hers from when her kids were little. We went to a little carnaval that happen to a be a bust. Yesterday the church had a trunk or treat for all the kids in our stake. There was such a big turn out. We just went and walked around because we don't need the candy. Here are a few pictures.

I asked Eric if he wanted to dress up and he said he would go as an "adult". (sounds like Eric, huh)

 I went as a confused World Series fan from last year!

Walker went as Shrek. He was so stinkn' cute!
